OUR FOOD

Keto food is special.

It is prepared with special ingredients and special care.

Below are a few interesting facts that might help understand the nature and behaviour of some key ingredients we use.

Flours

Keto flours (Almond flour, Coconut Flour, Flaxseed flour, Lupin flour) behave very differently to refined all-purpose white flour. They hold together differently, absorb liquids in different ways, taste different and most of all, have a radically different nutritional value.

This is why we do not slice our bread loaves or buns before despatch. If we did, the slices would most likely crumble in transit and that wouldn’t look very pretty. We also do not use any preservatives in any of our preparations. This means that the shelf life of keto breads, buns, pizzas is much shorter than regular carb and gluten rich items.

Breads & Buns

Best way to handle our breads is to slice the loaf when you receive it, and freeze in portions of 1 or 2 slices in ziplock bags or clingfilm for upto 3 months. This way, you get to enjoy the bread over a longer period of time than if you kept it in the refrigerator. Our breads toast perfectly in the toaster or a hot pan, straight out of the freezer. The buns can also be thrown directly onto the grill from frozen (remember to slice them in half before you freeze them!)

Coconut Flatbread

The coconut flour flatbreads (Roti) included in our meals are all handmade and cooked individually. Hence at times, even though we do try our best to keep consistency, there might be small imperfections in the end product like varying thickness, colour or maybe a few extra drops of olive oil. We humbly ask for your forgiveness here, as you can imagine it would be like trying to manufacture snowflakes. If we could find a machine to roll out and cook these, we’d be so stoked!

Oils and fats

Fat is your best friend on keto. We use authentic and natural fats to prepare your order. Real butter, ghee, coconut oil, olive oil, avocado oil, almond butter, peanut butter, macadamia butter – Yes. You will not find margarine, vegetable oils, seed oils, palm oil, or anything that nature did not intend for human consumption in our kitchen.

Sweeteners

We do not use sugar in any form in our products. No honey, no dates, nothing at all. We use erythritol, stevia, allulose, monk fruit and fibre syrup as these do not elicit an insulin response in your system. It is worth mentioning that we do not use xylitol as it is highly toxic to dogs.

Sauces

All of our sauces are chef-prepared in-house with keto ingredients – tomato sauce, marinara sauce, BBQ sauce, cheese sauce, marinades, pesto, dressings, dips, dry rubs and combination spices et al. We have developed these after a fair bit of experimentation to get the right flavours without the nasties.

Dairy products

We use fats that come from dairy - butter, ghee, paneer, cream, cheese in our preparations.

Nuts & seeds

We use a variety of nuts and seeds that are keto, in small to moderate quantities. If we need ‘milk’ for a recipe, we use nut milks like unsweetened almond milk and coconut milk. Soy milk is not an option and neither are oat milk, rice milk, quinoa milk etc.

Vegetables

There’s a huge list of keto vegetables and we stick to those. No carrots, peas, potatoes, kumara, etc. in our food. If the dish calls for bulking up or a side serve, we use the trusted cauliflower to do the job. If you haven’t yet tried our cauliflower mash, it’s totally insane as to how good it tastes!

Eggs, Meats, Fish and Poultry

Quality eggs, meats, fish and poultry are a priority. We try our best to use hormone-free, pasture-raised where possible and looking for a reliable supplier these days.
